  • 4-6 skinless boneless chicken breasts
  • 4 tablespoons olive oil
  • 1⁄2 cup butter
  • 1 packet cream cheese
  • 1⁄2 cup whole milk
  • 1⁄2 cup parmesan cheese grated
  • Salt to taste
  • Freshly ground black pepper
  • 3 cups Fettuccine pasta
  • 2 cups mixed veggies such as broccoli, bell peppers, zucchini, etc


Start by preparing the pasta. For this, take water in a large pot and add some salt to it. Once the water begins to boil, put the pasta into it and cook till the pasta gets cooked. The pasta should become soft but not become mushy. Drain the excess water and keep aside. Begin making the Alfredo sauce by heating a pan. Then add the butter to the pan and let it melt.

After this add the cream cheese and stir the two ingredients at low heat to form a smooth and creamy mix. To give the sauce the right consistency, add half cup whole milk and stir well. While adding milk, ensure you add it slowly little-by-little stirring constantly. This will ensure that no lumps are formed and the sauce becomes creamy and silken smooth in texture.

Season the sauce with freshly ground black pepper and salt . Stir in some of the grated parmesan cheese into the sauce. You can also add a dash of garlic powder and some crushed dried herbs such as thyme, basil, etc for added flavor to the sauce.

Meanwhile, wash the chicken breasts under running water and pat them dry. Heat olive oil in a pan and place the chicken breasts in the pan and cook them till they turn brown on both sides. To assemble the dish, in a serving plate, place the cooked fettuccine pasta. Over the pasta, pour the prepared Alfredo sauce with veggies. Next, place the chicken breasts and pour the remaining sauce over them. Top with remaining grated parmesan cheese.
