Soba, meaning buckwheat in Japanese, is a popular type of Japanese noodle and is considered the thin alternative to thicker udon noodles. Organic soba noodles are perfect for hot dishes such as noodle soups and cold dishes such as noodle salads or served with dipping sauces. As they are absolutely delicious, here are two simple and amazing recipes using Japanese soba noodles that the whole family will enjoy.

Sesame & edamame soba noodles

Ingredients:

  • Organic tamari sauce x ¼ cup
  • Garlic (sliced finely) x 2 cloves
  • Carrots (grated) x 2
  • Organic extra virgin olive oil x 1/3 cup
  • Honey (or organic maple syrup) x ¼ cup
  • Organic sherry vinegar x 2 tablespoons
  • Ginger (peeled & grated) x 1 ‘thumb-size’ piece
  • Edamame (shelled) x 1 cup
  • Chives (sliced thinly) x ½ cup
  • Sesame seeds x 3 tablespoons
  • Organic soba noodles x 150g
  • Organic toasted sesame oil x 2 teaspoons

Method:

  • Grab a pot, fill with water, add a pinch or two of salt and bring to a boil.
    Add the organic soba noodles and cook according to the directions on the packet. Then remove and drain.
  • Grab a large bowl and add in the garlic, organic tamari sauce, ginger, organic sherry vinegar, honey and organic toasted sesame oil. Then whisk in the organic extra virgin olive oil.
  • Then add in the drained soba noodles, carrots, chives and edamame and mix until combined.
  • Serve in a bowl and garnish the dish with sesame seeds.

Shrimp soba noodles with dipping sauce

Ingredients:

  • Organic toasted sesame oil x 1 tablespoon
  • Chives (finely sliced) x ¼ cups
  • Organic brown rice vinegar x 1 tablespoon
  • Organic soba noodles x 150g
  • Mirin x ¼ cup
  • Organic tamari sauce x ¼ cup
  • Nori sheets (slice into thin strips) x 1 sheet
  • Shrimp (shelled & deveined) x 200g
  • Whole pickled daikon (grated) x ¼ cup

Method:

  • Grab a skillet, add the organic toasted sesame oil and place over medium heat. Once heated, add in the shrimp and fry for around 3 minutes. Once cooked, transfer to a plate and put aside.
  • Grab a large pot, fill with water and place over a high heat to boil.
    Once boiling, add in the organic soba noodles and cook according to the instructions on the back of the packet.
  • Once cooked, drain the noodles and rinse them under cold water. Grab a bowl, fill it with water and ice cubes and add in the noodles.
  • Grab a small bowl and make the dipping sauce by adding in the organic tamari sauce, mirin, and organic brown rice vinegar. Mix until combined.
  • Grab a serving bowl and place in the soba noodles, nori seaweed and shrimp.
  • Garnish with the whole pickled daikon and serve with the dipping sauce on the side.
